This Mini Egg Banana Bread Oats bake is the perfect Easter brunch— fluffy, indulgent, and made even better with the Madagascan Pure Vanilla Extract from @vanillamart_

🛒Ingredients:
🍌1 Ripe Banana
🥄80g Rolled Oats
🥚 1 Egg
🥛100 mL Milk
🥄1 tsp Madagascan Pure Vanilla Extract* @vanillamart_
🥄 1/2 tsp Baking Powder
🥄1/2 tsp Cinnamon
🧂Pinch of salt
🥚 Mini Eggs (for folding and topping)

👩🏽‍🍳Recipe:

1️⃣ Blend: Place the banana, oats, egg, milk, vanilla, baking powder, cinnamon, and salt into a blender. Blend for 30 seconds until smooth.
2️⃣ Fold: Crush some mini eggs and fold into the batter. Pour into a heatproof dish and sprinkle the rest of the mini eggs on top.
3️⃣ Cook: Air fry at 170°C for 15 minutes. Let it sit for a few minutes to set before diving in!

Chicken Smash Sweet Potato Burgers 🍔

These air fried Sweet Potato Burgers are a must try for a satisfying, low-carb swap! We’re using Dr Will’s to bring that creamy, spicy, all-natural punch that makes every bite better🌶️

🛒 Ingredients:
🍠1 large sweet potato, sliced into rounds
🍗 250g chicken mince
🧄1 tsp garlic powder
🌶️1 tsp smoked paprika
🥄2 tbsp Dr Will’s Olive Oil Mayo*
🌶️1 tbsp Dr Will’s Sriracha*
🧀Handful Mozzarella
🧅Pickled Red Onion
🥬Lettuce

👩🏽‍🍳Recipe (serves 2):
1️⃣ Prep the Sweet Potato Buns: Brush the potato rounds with a little oil. Air fry at 200°C for 20 minutes, flipping halfway through.
2️⃣ The Chicken: Season the chicken mince with garlic powder, smoked paprika, salt, and pepper. Shape into balls. Place in a hot frying pan with baking paper on top and smash down flat. Cook for 6 mins per side. Melt mozzarella on top (use a lid to get it extra melty!)
3️⃣ The Sauce: For the dressing, mix together the mayo and sriracha.
4️⃣ Assemble: Spread the sriracha mayo on a sweet potato round, top with the smashed chicken, pickled onion, lettuce, and a final dollop of sriracha mayo before closing with the second sweet potato round.

7 Minute Chilli Cheese Noodles 🍜

In the Year of the Horse, the 7th animal of the zodiac 🐎 I’m bringing high speed energy to the wok. Amoy challenged me to cook a dish in exactly 7 minutes. These Chilli Cheese Noodles are fast, fiery, and cheesy—challenge complete ✨

🛒Ingredients:
🥄1 tbsp Amoy Light Soy Sauce
🥄1 tbsp Amoy Dark Soy Sauce
🥄1 tsp Sesame Oil
🍯1 tsp Honey
🌶️1 tsp Chilli Oil
🧄2 Garlic Cloves, minced
🍜1 pack @amoy_uk Straight to Wok Noodles*
🧅1 Spring Onion, sliced
🧀Handful Shredded Mozzarella
🥄Sesame Seeds, to garnish

👩🏽‍🍳Recipe:

1️⃣Whisk all the sauce ingredients in a small bowl: combine light and dark soy, sesame oil, honey, and chilli oil

2️⃣Heat a wok with a splash of oil. Sauté the minced garlic and half of the sliced spring onions for 30 seconds. Toss in the noodles with 2 tbsp water

3️⃣Pour the sauce over the noodles. Stir-fry until the noodles are fully coated and the sauce is sticky

4️⃣Mix in the mozzarella, tossing the noodles until the cheese is melted, stringy, and fully incorporated into the sauce. Garnish with the remaining spring onions and sesame seeds.

🥦Veg of Choice - Handful of Spring Greens, Mushrooms, Tenderstem Broccoli
Garnish: Spring Onions and Sesame Seeds

👩🏽‍🍳Recipe:

1️⃣Whisk the bone broth, gochujang, and soy sauce in a small pot. Bring to a simmer until well combined.

2️⃣ Place your dumplings in a steamer and steam for 7 minutes. While those cook, prepare your jasmine rice.

3️⃣ Steam or sauté your veg of choice until tender.

4️⃣ Pack your cooked rice into a small tea cup or bowl and press it into the center of a ramen bowl. Arrange the veg around it, pour over the spicy broth, and add the dumplings.

5️⃣ Garnish with spring onions and sesame seeds.
