Ingredients:

• 1 whole chicken
• Salt
• 1 large white onion, chopped
• 4 cloves garlic, chopped
• 2 cups rice
• 1 tbsp Turkish chicken shish powder (for the rice)
• 1 tsp turmeric
• 1 tsp paprika 
• 1 tsp oregano
• 1 lemon, chopped

For the marinade:
• 1 tbsp Turkish red pepper paste (or tomato purée)
• 1 tsp oregano
* 1 tsp paprika 
• 1 tsp Turkish chicken shish powder
• 2 good glugs olive oil 

For the stock:
• 4 cups boiling water
• Chicken stock powder
• 1 tsp Turkish red pepper paste

To serve:
• Fresh parsley

Method:

1. Add the chopped onion and garlic to your baking dish, then stir through the rice, turmeric, paprika, oregano and Turkish chicken shish seasoning. 
2. Season the chicken with salt (be generous). Mix together all marinade ingredients, then rub all over the chicken and underneath the skin for maximum flavour. Place on top of the rice.
3. Dissolve the chicken stock powder and red pepper paste (or tomato puree) into 4 cups of boiling water, then pour over the rice. Cover first with wet scrunched parchment paper, then tightly with foil.
4. Bake at 200°C for around 1 hour 15 minutes (depending on chicken size). Remove the foil and parchment, turn the oven up to 220°C and cook for a further 20 minutes until golden and crispy. 
5. Finish with fresh parsley and serve.

Indulgent Chocolate and Raspberry Mousse. Easy to make and very much a grown-up treat. I’m pairing it with a glass of @torolocowine Tempranillo Bobal, we originally found it at Aldi (it’s still there) and it’s now also available in Tesco. It’s smooth, easy to drink and great value, with rich berry notes that balance the chocolate perfectly. Recipe belowAD

Ingredients
For the chocolate mousse
200g dark chocolate
3 eggs, separated
50g sugar
300ml double cream
For the raspberry coulis
300g fresh raspberries
2–3 tbsp sugar
To assemble
Vanilla Ice cream 
Fresh strawberries
Method

For the Chocolate mousse
1. Melt the dark chocolate gently in a Bain Marie. 
2. Whisk the egg yolks with the sugar until pale and thick, then fold into the melted chocolate.
3. Whip the cream and fold into the mixture.
4. Whisk the egg whites until stiff and carefully fold through to keep it light.
5. Chill in the fridge until firm at least 4 hrs. 

For the Raspberry coulis
1. Add the raspberries and sugar to a saucepan pan.
2. Cook down until the fruit breaks apart and becomes syrupy.
3. Blend or mash and pass through a sieve if you want it smooth.
4. Leave to cool.

To assemble:
1. Fill a small glass tumbler with ice cream bases.
2. Spoon over the raspberry coulis.
3. Top with the chocolate mousse and icing sugar (optional)
4. Finish with fresh strawberries and serve alongside a glass of Toro Loco
